1 cup basmati rice, uncooked
1/2 can cream corn
dash cumin
1 can refried beans
1 package taco seasoning
1/2 cup sour cream
1 lb ground beef
1 onion
2 cloves garlic
1 green pepper
1 red pepper
1 can corn
1/2 can cream corn
1/2 tsp cumin seeds
salt & pepper
Grated cheese (tex mex blend)
Chili Powder
In a medium pot cook rice (per directions). Remove from heat and stir in 1/2 can cream corn and cumin.
In a large skillet brown beef. Add onion, peppers and garlic, cook until onions are tender. Stir in corn, cumin and s&p to taste.
In a bowl mix together refried beans, taco seasoning and sour cream.
In a 9x13 casserole dish, spread bean mixture for your bottom layer. Spread beef mixture evenly on top of beans. Rice is layered next, sprinkle chili powder on top, finish with grated cheese.
Bake at 350 uncovered for 30-40 minutes (until brown and bubbly).
