3 tbsp oil
3 gloves garlic minced
1 onion minced
1 big can of tomatoes (stewed, chopped)
1 ¼ tsp salt
¼ tsp pepper
1 8 ounce can tomato sauce
¼ tsp dried thyme
4-6 Chicken breasts
1 egg
½ c bread crumbs
¼ c parmesan cheese
1 c mozza cheese
Your favourite broad noodle pasta.
Heat oil, sauté garlic and onion until golden. Add stewed tomatoes, s & p. Simmer uncovered 10 mins. Add tomato sauce and thyme. Simmer 20 mins.
Pre heat oven, 350. While sauce cooks prepare meat.
Beat egg. Combine crumbs and parm cheese. Dip meat into egg, then coat with bread crumb mixture. Brown in oil.
Place meat in 12x8 baking dish. Pour 2/3 of the tomato sauce over meat. Place motza on top of that. Spoon on rest of the sauce. Sprinkle with remaining Parm. Bake for 45 mins.
Serve over broad noodle pasta.
