1 serving size boneless/skinless salmon fillet per person
1 tablespoon of dijon mustard per fillet
1 tablespoon of brown sugar per fillet
1 piece of 1X6 cedar that will fit on your barbecue
note: it is more economic to purchase an eight foot cedar 1X6 at your local lumber store and cut it to fit (about 6 inches per fillet is required)
soak the cedar plank in water for a minimum of one half hour (the longer the better). After the plank has been soaked place the salmon fillet(s), with what was the skin side, down. Spread the mustard on the top side evenly and then sprinkle the brown sugar on the mustard. Place the plank with the salmon on a preheated barbecue - medium to high heat and cook for 35 to 45 minutes depending on preference of moistness.
notes: use a spritzer bottle of water to control any flame ups and be sure that the plank is not burning when disposing of it.
