1 tbps butter
1 onion, diced
6 large potatoes, peeled and diced
2 1/2 cups milk
2 tbps butter
salt & pepper
Saute the onions with 1 tbps butter in a big pot. When the onions have softened, add the potatoes and about a cup of water (more if it needed). Add some salt and bring to a boil, cover and reduce heat to low. Simmer till the potatoes are tender (20 mins). Add the milk, butter and salt and pepper to taste. Keep cooking on medium till its all hot, but do not boil. With a potato masher, mash up the soup a bit, but you want to leave it a bit chunky.
