6 russet potatoes
2 cloves garlic
Fresh Italian parsley, about a handful
Vegetable oil
White vinegar

Peel potatoes and cut into large cubes. Boil in salted water until just tender, drain and put in large serving bowl. Add chopped fresh parsley, crushed garlic, oil, vinegar and s&p to taste; mix gently (avoid mashing the potatoes).
