- Fresh Tomatoes, on the vine (Plum or Roma), about 2 per person.
- Fresh Basil
- Bocconcini, or Mozzarella
- Extra Virgin Olive Oil
- Salt & Pepper
Optional:
- Parmesan (coarse grated, or I like to use a vegetable peeler for nice fat strips).
- Balsamic vinegar (just a drizzle)
- Toasted Pine Nuts (add right before serving)
Slice the tomatoes and cheese. On a fancy platter layer tomato, cheese and basil, repeat so everything is overlapping and work your way around the plate, in rows, or a circle.
Season with good sea salt and fresh cracked pepper, drizzle with olive oil. Add optional items if desired. Serve right away, it won't sit well for too long!
