6 slices favorite white bread
2 tsp (10 ml) dijon mustard
2 tbsp (25 ml) non-hydrogenated margarine
6 slices your favorite deli ham, slivered
1/4 cup (60 ml) chopped fresh parsley
3/4 cup (175 ml) old cheddar cheese, grated
3 eggs
1/2 tsp (2 ml) salt
1-1/2 cups (375 ml) 1% milk
1/2 cup (125 ml) light sour cream
1/2 red & green peppers, diced
1. Remove crusts from bread, cut each slice diagonally.
2. Spread each with mustard, then add margarine to the other side. Arrange half the slices, margarine side down, in an ungreased 13" x 9" baking dish.
3. Sprinkle evenly with half of the ham slivers, cheese, peppers and parsley.
4. Arrange remaining bread slices, margarine side up, on top and repeat with remaining ham, cheese, peppers and parsley.
5. Beat together eggs, salt, milk and sour cream. Pour over top.
6. Cover and refrigerate overnight. In morning, bake covered, in preheated 350 degree F. oven 30 minutes. Uncover and bake 10 more minutes or until puffed and golden.
7. Remove from oven and let stand 5 minutes before cutting into squares.
