12 x figs
4 x walnuts
1/4 lb. of blue cheese (113g)
1 tbsp. cognac (15ml)
1/4 lb. prosciutto, thiny sliced (113g)
1 tsp cracked pepper (5ml)
Raspberry Vinegar:
1/2 cup frozen defrosted raspberries (125ml)
1 tsp cracked pepper (5ml)
1 tbsp balsamic vinegar (15ml)
1. Cut into the figs halfway, being careful not to go all the way through. In a small bowl mix together blue cheese, cognac, walnuts and pepper. Mix together using a fork until well blended.
2. Stuff the figs with cheese mixture. Wrap prosciutto evenly around figs. If necessary secure with a toothpick.
3. Place on well oiled tray or cooking sheet.
4. Preheat bbq or oven to medium-high heat (375 degrees F.).
5. Oil the grill if using bbq.
6. Cook for 2 minutes then rotate figs and cook for further 2 minutes or until prosciutto is crispy and cheese is melted.
7. Remove from grill/oven and serve with raspberry sauce (optional).
Raspberry Vinegar:
1. In a small bowl mix together raspberries, cracked pepper and vinegar, reserve.
We were tired of creating the same old appys and made these. They were a big hit!
