1/2 cup butter or marg
1/2 cup chopped green & red peppers
1/2 cup coarsely chopped onion
1/4 cup all purpose flour
1 tsp. salt
1/4 tsp. pepper
2 cups milk
1 cup grated sharp cheddar cheese
3 eggs, slightly beaten
1 can cream corn (16oz.)
2 cups corn niblets
1 sml. jar chopped red pimentos (optional)
1. Saute butter, peppers and onion in pan until soft.
2. Stir in flour, salt, pepper, and gradually stir in milk. Bring to a boil stirring constantly.
3. Reduce heat, add cheese until melted and thickened.
4. Stir a little cheese into the eggs.
5. Add rest of the sauce and mix well. Pour into greased 9" x 11" casserole dish.
6. Place casserole disk in a larger cooking dish with 1" of water.
7. Bake 50 minutes at 350 degrees F.
My Mom used to make as part of special dinners. It was liked by all, even the kids that didn't like vegetables.
