2 1/4 c flour
3/4 tsp salt
1/3 c white sugar
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 c dried cranberries
1/2 c margarine
1 egg
1 c buttermilk
Ingredients work best when at room temperature.
Preheat oven to 400 degrees.
Combine flour, salt, sugar, baking powder and baking soda in a large bowl. Toss in cranberries.
Use fork, pastry blender or hands (make sure they are clean!) to cut margarine into flour mixture.
Add egg and buttermilk using fork to combine. Do not over-mix.
Drop dough onto floured surface and sprinkle with flour until not too sticky to handle. Form into ball.
Divide dough in half. Form a flat pie shape about 1 1/4 inches thick. Cut in half and then divide each half into four (...cut into 8 pieces, like you would a pie).
Place scones on parchment lined cookie sheet and bake for about 15 minutes or until golden.
Cool and eat!!! Some add a slice of cheddar cheese or just a little butter.
